We work quickly from harvest to kitchen, always hand-stirring and pouring so our preserves retain nice big pieces of fruit in every spoonful. We use a light touch when adding pure cane sugar and pectin to maximize the flavor, color, clarity, and texture of our vibrant More Fruit-Less Sugar Preserves.
